Sirloin is a primal cut to be found beneath the back of the animal, between the ribs and fillet. A combination of the finest tender meat with an outer edge of fat down one side. Juicy and fantastically robust - a certain crowd pleaser.
One of the highly prized of all steak cuts. It comes from the lumbar region beneath the backbone and the laziest muscle of the cow therefore the most
tender. A very lean cut of meat with an almost butter soft texture.
The rib eye also known as the scotch fillet is a fine cut from the top of the rib primal portion of beef. Generous amounts of marbling ensure a Super beefy, juicy and flavourful steak.
